This weekend was Homecoming here in town - and one of my favorite traditions (besides the game of course!) is to participate in the Homecoming 5K the morning of the big game. It's a fun way to show some school spirit, get into game day mood bright and early, and get your sweat on before kickoff!
I have a lot of great memories of football at my alma mater, Colorado State University. This is where my husband played and started his coaching career, I worked as an athletic trainer and was a rain-or-shine fan for years! Most years, I participated in the Homecoming 5K Run around the Oval. I usually recruited a friend or family member to run it with me which was always a blast! I remember the first time I did it, I walk/ran with my mom through freezing rain! I also ran it with my aspiring cross-country stud sister a few years ago and talked her ear off the whole time (I learned not everyone talks when they run...sorry sis). Last year, my dad and I ran it together and I was faced with a challenge the night before when he accused me (Ok ....called it like it was) of never ACTUALLY RACING a race. My competitive drive set in and I discovered what racing really felt like with a 5K PR! Sometimes you just need that push...
While I can't make it back to CSU for Homecoming this year - I was so excited to carry on my 5K tradition here at Adams State - this time with my coaching wife buddy Jamie! I'm so blessed to have found such a great friend and running buddy here!
After the race I headed home to whip up some lunch for some last minute game day guests. Mexican is always my go-to thing with guests - it's so yummy, and easy to make healthy! Stuffed peppers were on the menu Saturday, since there weren't too many people coming. Usually I just do tacos! I filled these half peppers with a mix of quinoa, black beans, ground turkey and salsa. Topped with some cheddar (or cheddar style Daiya for me!). We garnished our peppers with homemade guac, green onions and cilantro too.
We had a great time at the game - lots of homecoming school spirit and beautiful weather! We started the game cold, and ended up getting sunburned in the hot high-mountain sun! A perfect day for football. The game was closer than we would have liked (my nails are gnawed down a little bit!) but we came out with a win!
If your school offers a Homecoming 5K - I SO encourage you to check it out! Even if you're not personally involved with the university, it's still a fun way to get involved! It always supports something great going on at the school, and is a great workout! There are usually families and participants of all abilities so it's a good chance to walk, jog or race for 3 miles! If you've never run a 5K before, I'm working on just the program for you - so keep your eyes peeled!
