Thanks for joining me for some coffee this morning! And lucky for you, I've got more than just coffee being served up. I've been on a total waffle kick lately. Is there anyone out there that DOESN'T like waffles? I'm pouring out your latte and sending you away if that's you.
So today, we're having coffee and waffles. I recently went to a new(ish) breakfast place here in Fort Collins and they served up some bomb gluten free apple waffles. If a breakfast restaurant can serve GF waffles, they have a loyal customer in me! Since I can't go out to breakfast every day (meh), I've been making waffles more at home too!
I recently got sent a package of Nicole's Naturals Gluten Free Waffle & Pancake Mix to try. I didn't even save any for pancakes because I'm too obsessed with waffles. These were so yummy! I made one batch exactly how the instructions say to and they turned out great (imagine that?!). The next time I used egg replacer and coconut oil so my little sister could eat them. They still tasted delish but didn't come out of my waffle iron as nicely. (This could have been user error too...sometimes I get impatient with the little buggers). These aren't your average white, fluffy waffles...they have an awesome whole grain-y texture and taste, with an extra little burst of rich sweetness at the end. They use GF oats and cornmeal which makes for a really different, but really delicious waffle. I like mine best with Earth Balance and berries

If you were sitting with me having coffee and waffles this morning, I'd probably talk your ear off about sleep training and granite countertops, cuz really that's all I've been thinking about lately. When did I get so old and boring?!
I also would tell you how OVER THE MOON excited I am that Cheerios are FINALLY going gluten free!! I've said for years that it would be an easy cereal to make gluten free and it looks like they are finally doing it! I might even have to take a break from waffles for a while to indulge in daily bowls of Cheerios. I've heard they will start selling them in July. Be prepared.
I would also probably talk about how I'm going to be in Hawaii a week from now! If Hawaii wasn't exciting enough, I get to meet my very new (like 2 weeks old) little niece while I'm there! Yep! I'm an auntie! I'm thrilled that my sister and I had our first babies so close together. It's going to be so fun for them to grow up together!
Well, I'm off on my long run...enjoy your coffee and waffles! Or Cheerios...I won't hate if you eat Cheerios instead.
